On Thursday afternoon, March 13, the usually clanging to dishes and glasses and the sounds of customer orders as waiters and waitresses served lunch could be heard at the Jericho Diner. But after 3 p.m., the diner would go quiet as it would shut its doors to make way for a CVS project that will be built on the corner of Roslyn Road and Jericho Turnpike.

Diner owner Jimmy Stavropoulos, who has been running the diner since 1994, and his son Dino explained that they may relocate to the former Sparta Diner, which was located on Herricks Road in Garden City Park.

Mineola American founder and current columnist Lou Sanders would often mention the Jericho Diner in his column "Around the Town with Lou." "For 30 years, it was my main source of meeting people for my column," he said.
