We do not think of Long Island as having a dairy industry but according to the 1944 edition of Long Island - The Sunrise Homeland dairying is one of the largest industries in Nassau and Suffolk Counties. Nassau dairymen deliver daily about 40,000 quarts of milk while their counterparts in Suffolk distribute 60,000 quarts daily. The annual income in these two counties exceeds $5 million (which was a considerable amount of money in 1944).
The smell of cookies, cakes and/or pies baking in the over is something I always associate with the holiday season. One of the Village employees was gracious in supplying the following recipe. I hope you enjoy the Chocolate Cake:
Sift: 2 teaspoon Baking soda
2 cups flour
4 level table spoons Cocoa
1 cup of sugar
1 pinch of salt
Add: Slowly mixing with above
1 cup cold water
1 cup miracle whip (1 small jar)
1 teaspoon Vanilla
Bake at 350 degrees for 60 minutes in a standard loaf pan.
Mocha Icing:
1 Tablespoon cocoa
2 Tablespoons (heaping) butter
Cream together. Then add:
2 cups confectionery sugar
1 teaspoon vanilla and enough hot coffee to make it creamy
May the love in our hearts radiate on our faces for all to see. May we daily use encouraging words in our dealings with others; May your dreams of today become reality; May good health be your escort throughout your life, but most of all may the love of your family and friends be always with you. Have a wonderful holiday season and a healthy and happy year to come.
